Introduction


Hi I'm Tony Heptinstall.
I teach final year cookery students at Otago Polytechnic in Dunedin, New Zealand.

I have lived and working in Dunedin for 11 years and have spent 9 years teaching at the Polytechnic. I previously lived in central London were I managed kitchens for contract catering firms and charities.

There are two main aims for this blog. Firstly, I am enrolled in a flexible learning course at Otago Polytechnic, http://groups.google.com/group/flexiblelearningpractice and I need to produce a learning log as I develop a part of my course for online/blended delivery.

Secondly I want to use this resource as a development tool for my course and explore the use of online multimedia in teaching cookery, which is traditional a very hand subject.

nice one tony. good to read where you're coming from, and where you'd like to be going.

I'm looking forward to when Thanasi you and I meet and can talk about the possibiities here. Also recommend that you drop a comment in on the baking team's blog over in Newcastle Australia, as I think we could all learn quite a bit from them.

Hi Tony,
Just making contact, we at Hamilton baking have done some stuff with leigh before "blended chocolate" which for me was a hudge experiance considering the hands on aspect of chocolate tempering. The good news is it can be done, lots of work but the outcome is worth it. I still use blended chocolate (web site & CD) now and my students doing the chocolate courses look at this resource as a bonus with 100% particapation.

Tony, you should ask Leigh for a copy of blended chocolate. that could be a good start. The resouce is free and you could deliver it straight away? Just a thought.

This is a great start, and we should use this as an opportunity to network and share resources, ideas and strategies. We are about to deliver content to students in the workplace using PDA's, we we will have heaps to talk about. I have talked to Selina a few times and you have a great mentor there. good to see you look like a "real" chef! I am looking forward to seeing some of your wonderful recipes available on your blog with a link from the Otago Polytechnic hospitality website.... way to get yourself and the course out there.

If you want to publish your course recipe book you could do this relatively cheaply through http://www.lulu.com/. I'm sure there are plenty of us who could help you with editing.
